In a Piedmont undergoing great change in the late 1980s, Franco Armini opened his artisanal workshop in Racca, a small hamlet of Alba, the capital of the Langhe region.
In those times, however, Piedmontese charcuterie, did not shine in terms of quality, the most popular products being those in the medium-low range.
Instead, Franco immediately chose another path, to make the best salami he was capable of. He was inspired by the salsamenteria of Emilia and Veneto, personally choosing the pigs from which to obtain the meat, experimenting with textures, recipes, and seasoning.
It was this decision that, in the 1990s, made Salumeria Armini the Piedmontese benchmark for quality salami, the choice for those who were looking for something more authentic and good.
A success that continues today, after Franco was joined by his sons, Andrea and Claudio.
