It all started with the choice of a farmer to recover some ancient varieties of native Sicilian grains that have now disappeared in the area. The basic idea was to grow them according to the principles of organic farming.
This is where the history of Terre e tradizioni was born, a company that today we can consider the "custodian" of these ancient grains.
And it is from the meeting with a master pasta maker and the desire to enhance these archaic grains that a line of pasta was born in which to find the aroma and flavor that these ancient cereals, nourished by the earth and the sun of Sicily.
What Terre e tradizioni does is a unique project since it uses only organic grains of varieties known since Greco-Roman times, such as Timilia, Mallorca, Russello and Saragolla grown by a small but active group of farmers in the harsh and sunny plains of Sicily, Puglia and Campania.
All the grains are stone-ground in the mill of Montesano sulla Marcellana, within the Cilento, Vallo di Diano and Alburni National Park.
